When Hailey Bieber partnered with Erewhon in 2022 to launch the Strawberry Glaze Skin Smoothie, it became a cultural moment. The pastel-pink smoothie became a symbol of “California wellness”.

Part of the smoothie’s success comes down to timing. What’s in the iconic smoothie?

The original Strawberry Glaze Skin Smoothie contains strawberries, bananas, avocado, dates, almond milk, maple syrup, and sea moss gel, along with a scoop of collagen peptides and a strawberry glaze made with coconut cream and maple syrup. And here’s the thing: the smoothie is already almost vegan. The only real roadblock is collagen, which is typically derived from animal sources. The good news? Swapping it out is easy—and arguably more aligned with the smoothie’s glow-from-within ethos.

Hailey Bieber’s Erewhon Smoothie Dupe Recipe

What You Need:

For the strawberry glaze:
3 strawberries
2 tablespoons simple syrup 
½ cup water
1 teaspoon beet juice 

For the smoothie:
1 cup MALK almond milk, or plant milk of choice 
1 cup strawberries
½ avocado
½ banana
1 tablespoon vegan collagen powder (see options below)
2 dates
1 tablespoon sea moss 
1 tablespoon maple syrup 
1 dropper stevia
2 tablespoons coconut whip, for garnish

What You Do:

1. For the strawberry glaze, into a blender, add all ingredients and blend until smooth. Set aside.
2. For the smoothie, into a blender, add all ingredients. Blend until creamy and smooth. Spread coconut whip on inside of jar, pour in glaze, then smoothie. 

Vegan collagen sources

To veganize the iconic smoothie at home, simply replace collagen with a plant-based alternative that supports skin health. True collagen itself is technically only found in animals, so many vegan “collagen” products instead either contain collagen-boosting nutrients that help your body produce its own or use plant-derived peptides that mimic the structure of collagen.

Most vegan collagen products rely on ingredients like silica, vitamin C, amino acids from plants, and botanicals that feed your body’s natural collagen production. Common plant sources used for these nutrients include broccoli and carrots (for isolated peptides), as well as soy, pea, and wheat proteins that provide the building blocks your body needs.
