Michigan-based vegan food truck and restaurant Shimmy Shack is opening a non-profit organization and food pantry Shimmy’s Cupboard in Plymouth to serve vegan and gluten-free food to those in need during the coronavirus pandemic. “With the steady increase in the use of food banks over the years, it became obvious there was a need to ensure those who choose to eat vegan or gluten-free have a safe place to access food and attend educational classes,” Shimmy Shack and Shimmy’s Cupboard owner Debra Levantrosser said. “We realize this is a population in need of healthy alternatives.” Shimmy’s Cupboard is seeking donor stores and organizations to help fill its shelves along with tax-deductible monetary donations to jumpstart the pantry.
Meanwhile, Shimmy Shack is still serving its menu of burgers, hot dogs, fries, and shakes, available for delivery through DoorDash. The company also offers a variety of vegan and gluten-free comfort food fare for pick-up, including take-and-bake Broccoli-Quinoa Bake, Not-Tuna Noodle Casserole, and cheesy Mostaccioli, along with a selection of baked goods such as cookies, cakes, and cupcakes.
Other vegan businesses have pivoted in ways to serve their community amid the coronavirus pandemic, including vegan butcher shop Your Local Seitanist in Chattanooga, TN which owner Linley Danielle transformed into a pantry to supply snacks and meals for children of low-income families while schools are closed during the stay-at-home order.
