Vegan race-car driver and environmentalist Leilani Münter served the Impossible  Burger for fans at the Chicagoland Speedway last month. Münter was accompanied by award-winning vegan bodybuilders Korin Sutton and Ryan Nelson at the event to show fans the advantages of a plant-based diet. “We couldn’t turn up at the race track with kale and quinoa. We needed something that was packed with flavor and wasn’t going to be a huge departure from the food that people were used to eating at the track,” Münter told VegNews. “What better product to do that than the Impossible Burger?” NASCAR fans sampled the vegan patties topped with Follow Your Heart cheese and dressing, Miyoko’s Kitchen plant-based butter, and served on Pretzilla slider buns. Last year, Munter served race fans free vegan food in conjunction with the debut of her Vegan Strong-themed race car at the Daytona International Speedway. “We don’t expect to turn the NASCAR fan-base into vegans overnight,” Münter said, “however, by planting the seed and opening people’s minds to the new wave of vegan options and how they can be healthier eating vegan, it will be a win-win for people, [the] planet, and the animals.”
