Nevada Steakhouse Debuts Vegan Menu

Hank’s Fine Steaks & Martinis added a separate menu with plant-based cauliflower steaks, stuffed eggplant, and two decadent desserts.

Henderson, NV-based steakhouse Hank’s Fine Steaks and Martinis inside the Green Valley Ranch resort (a property owned by entertainment company Station Casinos) recently debuted a separate vegan menu. Executive Chef Doug Zuk told local media outlet Vegans Baby that he developed the vegan menu after receiving customer requests for plant-based dishes. “We wanted to be able to comfortably accommodate all the guests’ dietary requests with something more than a plate of steamed veggies [or] veggie pasta,” Zuk said. The new rotating menu features dishes such as mushroom-based King Trumpet “Calamari,” vegan ricotta-filled Stuffed Eggplant, and Cauliflower “Steak,” as well as several desserts including a layered Chocolate Decadence cake. In April, Las Vegas resort Red Rock (which is also owned by Station Casinos) added vegan options such as roasted beet ravioli, pan-seared hearts of palm croquettes, and spiced pear sorbet to the menu of steakhouse T-Bone Chophouse.
