Last week, Panera Bread announced it would be introducing more plant-based proteins to its menu while making a switch to cage-free eggs. Introducing items such as edamame and quinoa as protein sources shows how the fast-casual restaurant and bakery recognizes “that guests are increasingly seeking plant-based proteins for personal health reasons and/or to reduce their environmental impact,” Sara Burnett, director of wellness and food policy, said. “Our guests want to understand where food comes from. Animal welfare is a huge focus for us, and our guests believe we need to be part of the solution to the food system.” Panera joins the ranks of other fast food and fast-casual eateries quickly adapting to a shift in consumer tastes toward more mindful, healthful choices.
