Over Easter weekend, Martha Stewart shared a photo of herself—complete with basket and bunny—standing in her hallway. But it wasn’t Stewart’s holiday spirit that caught people’s attention. It was the color of the walls behind her: pistachio. Homes & Gardens called the shade “classic, calming, and synonymous with nature.” Good Housekeeping has echoed the sentiment about the soft green hue, calling pistachio “soft and sophisticated,” with the power to “elevate any outfit.”

Lately, pistachio seems to be everywhere. Not just on our walls or in our wardrobes—it’s made its way into our food, too. And of course, that tracks. Pistachio is a nut, after all. But now it’s so much more. It’s showing up in chocolates and lattes, anchoring ice creams, and even starring in trendy dairy-free milks. It’s the flavor of 2025 (hello, Dubai chocolate), and everyone’s obsessed. But why?

Aside from their deliciously nutty, subtly sweet, and earthy taste, pistachios have a lot going for them. They’re planet-friendly, packed with health benefits, and they’re increasingly tied to a sense of style and indulgence.

Why are pistachios so popular right now?

One of the biggest reasons pistachios are enjoying a boom in popularity is, put simply, their accessibility. They are grown in abundance across California, and in 2024, they generated almost $3 billion for the state’s economy. They are easy to grow in California for the same reason they’re good for the planet: they’re resilient. Pistachios need fewer resources than other crops (like almonds, for example, which are water-intensive), and they’re drought-resistant (they’re not put off by California’s dry, arid desert).

TikTok has helped turbocharge the craze. Search “pistachio coffee” and you’ll find hundreds of clips—many with six‑figure views—celebrating the nut’s rich flavor and its matcha‑like, aesthetically pleasing green hue. The same social‑media hype has fueled the viral rise of Dubai chocolate, a candy bar with a pistachio‑cream and kadayif center. One tasting video by creator Maria Vehera has pulled in nearly six million views, spawning copycat versions from major brands like Lindt and Lidl.

That association with Dubai’s glamor only heightens pistachios’ luxe reputation. They’re already among the priciest nuts: trees can take up to twenty years to mature, and harvesting is labor‑intensive (some orchards still pick by hand). But all of that work pays off, because pistachios are not just tasty and more sustainable than other nuts, they’re also nutritious. In fact, they pack in protein, healthy fats, fiber, vitamin B6, thiamine, and copper, alongside many other minerals and potent antioxidants.

From creamer to frozen yogurt and beyond, pistachios are everywhere

If you want more pistachios in your life, you’re not short on options.

Dairy-free milk brand Califia has called pistachio the “it flavor” of Spring, so it makes sense that it wants a piece of the pie. It recently announced the launch of its Organic Pistachio Almond Creamer, which is made with organic pistachios and almonds. So far, it’s a hit. One reviewer on the brand’s website said, “It was such a nice addition that made my coffee taste creamy, nutty, and delicious.” Another added: “My taste buds exploded with excitement.”

Another company that believes in the pistachio hype is Táche. In fact, this dairy-free brand has built its entire product portfolio around the nut—all of its milk products are made with pistachio nuts. The brand even has its own line of pistachio-themed hats.

If you’re craving Dubai chocolate, there’s bad news and good news. The bad news is that the original, and most copycat options on the market, contain milk. The good news? It’s totally possible to make your own vegan version from scratch. Find out how here

Pistachios may be having their moment, but like any trend, it comes with a cost. As the demand for pistachio-packed treats rises, so does the pressure on growers—and the potential for scarcity. Still, whether you’re sipping a pistachio latte, painting your walls a soft green, or enjoying pistachio frozen yogurt on a sunny afternoon, one thing is clear: for now, at least, the pistachio era is just getting started.
