Quartz Builds Vegan-Friendly Latke Recipe Bot

A new program is tweeting latke recipes—made vegan with simple swaps—every hour throughout Hanukkah.

Media outlet Quartzy (a subsidiary of Quartz) recently created “@everylatke”—a program that randomly tweets recipes for latkes (potato fritters) every hour during Hanukkah. Writer Elan Kiderman worked with New York latke expert Liz Neumark to create the bot’s untested recipes, which Kiderman assures can be made vegan with simple swaps. “To go vegan,” Kiderman advised, “swap out your eggs for egg substitute. And if you’re desperate, you can do just fine with some apple sauce, cooked oats, or a drop of non-dairy milk.” Thus far, the bot has generated several accidentally vegan latke recipes, including “Jennifer’s unreliable latkes” and “Xavier’s pulled latkes”—the latter of which is made with aquafaba (or chickpea brine) instead of eggs.
