You might think that it would be difficult to keep a two-year-old, an omnivore, and a vegan happy at the dinner table. Luckily, that’s just not the case. Ever since my daughter could eat solid foods, I’ve given her the same vegan meals that my husband and I enjoy every day and she’s grown to be a happy, healthy, open-minded eater. Now that I’ve had a little more than a year to experiment with kid-friendly meals, I have some go-to recipes that are always a hit for the whole family. And since it’s a chilly time of year, I want to share some of our favorite soups. Cook a double batch and freeze half to save yourself time and money in the future.
Pair these soups with a salad, fresh bread, and top them with something tasty and creative. I love adding grilled tempeh bacon to the Split Pea Soup (hello, protein boost!). The Tomato Rice Soup is especially delicious and filling with some diced avocado on top. Here are three recipes that’ll fill your kiddo’s belly with nourishing, plant-based deliciousness.
