Like our two-dimensional friend Garfield, we are powerless to the magic of glorious, gooey lasagna. Because of its cheesy legacy, we’ve had to DIY-veganize it for years (and it was worth it every time). But, there are some nights when an empty fridge and a deficiency of down time has forbidden us from achieving the lasagna nirvana that we so desperately craved. Thanks to Amy’s, those days are now over. In case you missed the vegan memo, the frozen-food master makes a Vegetable Lasagna with Daiya, and it has come to our rescue many late evenings. In addition to the finest faux mozzarella, it’s stuffed with zucchini, spinach, onions, carrots, tofu, and the company’s signature sauce. And, bonus—it’s gluten-free. Meeeeeow.
