Smoked Peaches With Boozy Vegan Rum Whip

Rum-infused whipped cream adds a smooth, rich flavor to juicy, smoky peaches. To keep the best whip texture in this recipe from the Vegan Barbecue: More Than 100 Recipes for Smoky and Satisfying Plant-Based BBQ cookbook, place your whipped cream in the freezer for about 10 minutes to firm back up before scooping. What you need:

4 peaches, halved and stones removed
1 tablespoon raw sugar
1 cup vegan whipped cream
2 teaspoons sugar
1 teaspoon vanilla extract
1 tablespoon spiced rum

What you do:

  1. Prepare a smoker for a 15-minute smoke (140 to 165 degrees). Over peach halves, sprinkle raw sugar evenly. Smoke peaches, cut side down, for 30 minutes.
  2. Into a medium bowl, add vegan whipped cream and fold in sugar, vanilla, and rum.
  3. Serve warm peaches with a dollop of spiced rum whipped cream.
