Stone Fruit with Fresh Mint

So simple it’s hardly a recipe, this fruit medley is fresh and delicious. Make sure to use ripe, in-season fruit.

What you need:

  • 8 yellow peaches, nectarines, plums, or apricots, sliced
  • 1 teaspoon freshly-squeezed lemon juice
  • 1/4 cup sugar
  • 1/4 cup spearmint leaves, chopped
  • Mint leaves for garnish

What you do:

In a bowl, gently toss fruit with lemon juice, sugar, and chopped mint. Garnish with whole mint leaves.
