Turmeric Persimmon Nice Cream

“Nice cream” (ice cream made from bananas) is a delicious way to enjoy a frozen treat while getting all the fruit’s nutrients without the fat found in traditional ice cream. To make this treat even better, we’ve added ripe persimmon for extra sweetness, coconut milk for creaminess, and turmeric for flavor. The result is a perfect dessert that you’ll soon transform into a midday snack.
 

What you need:

 
2 frozen bananas, sliced and frozen
1/2 ripe persimmon, diced and frozen (reserve other half for garnish)
¼ teaspoon ground turmeric
2 teaspoons coconut milk

What you do:

1. Into a food processor or blender, place frozen bananas and persimmon. Blend until mixture begins to form a ball.
 
2. Add turmeric and coconut milk (you might need to add more liquid if using a blender) and continue mixing until an ice cream consistency is reached. Spoon mixture into a bowl.
 
3. Slice remaining half of persimmon for garnish, or dice and mash like a compote. Serve with your favorite toppings.
