These days, we don’t need eggs to make a wonderful mayonnaise, but Sir Kensington’s Fabanaise takes that concept one step further with its egg-free, aquafaba-based vegan mayo. Aqua-who-ba? A Latin-ish word for “bean water” coined by software engineer Goose Wohlt, aquafaba is an innovative vegan egg replacer that can be used to make anything from macarons and frosting to (you guessed it!) vegan mayonnaise. Since popping open our jars of Fabanaise—in Original and Chipotle flavors—we’ve been crafting perfect tempeh bacon BLTs, tossing tangy coleslaws, and dipping chips and crackers.
