What you need:

8 carrots, peeled

½ teaspoon hot paprika
1 teaspoon ground cumin
Juice of 1 lemon
½ teaspoon salt
½ teaspoon pepper

What you do:

  1. In a medium saucepan, add carrots and cover with water. Bring to a boil and cook until tender, about 10 minutes, then remove from pan, and set aside to cool.
  2. Once cool, slice carrots into ¼-inch rounds. In a medium bowl, combine carrots, olive oil, garlic, parsley, paprika, cumin, lemon juice, salt and pepper, and mix well. Place in refrigerator to chill for 30 minutes before serving.
