Starting January 6, Mexican-inspired chain Rubio’s Coastal Grill—which is known for its fish tacos—will add plant-based Impossible Meat to its menu at all of its locations in California, Nevada, and Arizona. Rubio’s plant-based Impossible Meat is seasoned with a proprietary blend of spices and will be available as a replacement for chicken or steak in any of its entrées. “We are using a signature blend of Mexican spices unique to Rubio’s in our Impossible Foods menu items,” Rubio’s Co-Founder Ralph Rubio said. “It pairs perfectly with our coastal-inspired flavors and expands our protein options that guests can feel great about eating.” 

On the menu
Rubio’s will also feature Impossible Meat in three new menu options: Impossible Taco Salad (Impossible Meat, romaine lettuce, black beans, roasted corn, salsa fresca, tortilla strips, sliced Hass avocado, and dairy-based signature pickled jalapeño ranch dressing); Impossible Burrito Especial (Impossible Meat, handmade guacamole, dairy-based chipotle white sauce, roasted chipotle salsa, citrus rice, black beans, and salsa fresca wrapped in a warm flour tortilla and served with tortilla chips); and Impossible California Bowl (Impossible Meat, citrus rice, handmade guacamole, black beans, romaine lettuce, salsa fresca, and dairy-based chipotle white sauce with a choice of salsa verde or roasted chipotle salsa).

Make it vegan
The Impossible Taco Salad can be ordered fully plant-based by omitting the ranch dressing (which Rubio’s suggests customers substitute with lemon agave vinaigrette) while the Impossible Burrito Especial and Impossible California Bowl can be made plant-based by omitting the chipotle white sauce.
