On Friday, Scandinavian Airlines (SAS) added a limited-time vegan option to its in-flight menu. The new dish focuses on local Nordic ingredients and features thyme-roasted, organic mushrooms hand-foraged from Hällestad, Sweden over a lentil, beet, and wheat salad tossed with black beans from Öland, Sweden. The dish is served with sides of sliced golden beets, hummus made from yellow peas, and vinegar-roasted buckwheat. The option is available during a two-week trial period to SAS Plus passengers on 4,000 flights (that last for a duration of 80 minutes or more) between Europe and Scandinavia. Should SAS decide to add the vegan option to its permanent menu, the airline will join its air-travel competitors, which have recently modernized their in-flight menus, including Air New Zealand, which added the Impossible Burger to the in-flight menu of two of its routes.
