Seattle to Get New Vegan Bakery and Ice Cream Shop

After a successful crowdfunding campaign, Seattle Cookie Counter truck will open as a brick-and-mortar location.

Seattle Cookie Counter—a vegan bakery, espresso, and ice cream shop that operated out of a Volkswagon bus for two summers—was successfully funded on Kickstarter last week and will open as a brick-and-mortar retail location in the Phinney Ridge neighborhood. The shop will feature espresso beverages, pop tarts, ice cream, gluten-free items, and fresh-baked cookies (served with a glass of housemade vegan milk during cookie happy hour). Owners Chelsea and Chris Keene are long-time vegans and believe that “changing minds about vegan food is one of our favorite parts of running this business.”
