Montreal, Canada-based vegan restaurants Sushi Momo and LOV are joining forces to open a premiere plant-based sushi spot later this month. Bloom Sushi will be an intimate 40-seat restaurant that combines the best of what both vegan powerhouse restaurants have to offer. The menu will feature Japanese-inspired dishes such as expertly crafted sushi rolls, spring rolls, edamame, and seasonal dishes, plus a selection of organic sake and kombucha-based cocktails. The aim is to offer a small but refined selection of dishes that aren’t too expensive—but prove that vegan sushi is more than just avocado and cucumber. The restaurant’s owners will aim to be as environmentally friendly as possible. Aside from using only plant-based ingredients, many menu items will be organic, and the restaurant will try to do away with as much plastic as possible. Bloom will be open in the late afternoon and evening hours starting at the end of August.
