The seven-week online class, titled “A Lifestyle Change to Improve Health: The Vegan Diet” will commence this September, and enrollment is open to the public as well as students and nurses. According to the online course description, students will learn about plant-based cooking and how veganism can prevent chronic illnesses, encourage weight loss, and increase energy levels. Instructor Marilyn Mouradjian, MSN, RN, comments, “The vegan diet has the potential to extend an individual’s health while making delicious choices in their food selections.
