Vancouver residents will soon be able to enjoy the fine-casual dining atmosphere at the city’s newest vegan restaurant, Graze. The forthcoming establishment is a collaboration with theveganproject.com founder Bridget Burns and investor Michael Lyons, and the menu was created by W2 Café’s Executive Chef Karen McAthy. Every dish is less than $20 and made with sustainability in mind. Along with vegan cocktails, the restaurant will serve up cruelty-free fare such as pickled beet fries and artichoke and cauliflower perogies with toasted almond and wild nettle pesto sauce. “Our goal with Graze is to add to the growing opinion that plant-based restaurants can offer a satisfying, high-quality dining experience,” Burns tells vancitybuzz.com.
