New vegan diner Heart Beet Kitchen opened in Ocean City, NJ, a state where more than 600 diners currently operate. The eatery—which also operates a location Westmont, NJ—serves plant-based versions of classic American diner dishes such as pancakes, French toast, Tempeh Benedict served with a cashew-based hollandaise sauce, and burgers made with portabello mushroom patties, along with internationally inspired brunch items such as pad Thai made with zucchini noodles. Heart Beet Kitchen—which operates under the ethos “because what we eat should come from the heart”—uses only locally sourced, organic ingredients and also offers custom desserts such as layered cakes, pies, and cookies; complimentary yoga classes; and five-course tasting dinners.
