Vegan Latin Eatery to Open in Phoenix

Pachamama will serve fan-favorite, vegetable-forward dishes such as Avocado Tostadas and Chipotle Cashew Crema Mac at their new brick-and-mortar location.

Plant-based Latin pop-up Pachamama plans to open a brick-and-mortar location in Phoenix, AZ. Founded by husband-and-wife team Maria and Kevin Lebron, the vegan pop-up first started serving global-inspired dishes with an added Latin twist at the Downtown Phoenix Farmers’ Market last spring. 

A vegetable- and fruit-forward eatery, Pachamama avoids using soy-based meat alternatives, opting for fresh produce from local farmers instead. After their experience with a lack of vegan options while dining out, Maria Lebron turned to her husband, Kevin—a chef for over 20 years—to help launch Pachamama. 

Located at 19th Avenue and Indian School Road, the brick-and-mortar will continue serving pop-up favorites such as Avocado Tostadas, Chipotle Cashew Crema Mac, Turmeric Farro Salad, and the couple’s most popular dish: Tacos de Papa (crispy potato tacos featuring a chile garlic mash, marinated radishes, smoked almonds, cilantro, and their signature secret sauce). Due to the COVID-19 pandemic, Pachamama will offer takeout and curbside pickup.

With the opening of their new brick-and-mortar, the Lebrons hope to continue expanding their sustainability practices. “We buy from local farms and some restaurant suppliers, but eventually we would love to partner with farms to be able to grow our own … so that we can know exactly where everything is being sourced,” Maria Lebron told the Phoenix New Times.

Pachamama’s opening date is set to be announced in the following days, according to a recent Instagram post
