This Las Vegas outpost from celebrity chef Roy Choi is sure to please the entire Earth Day dining party. Skim past the meat options on the menu and order the BBQ Veg and the Eggplant Schnitzel, found under the cleverly titled “LA Sh*t” portion of the menu. The Soondubu Pot (a spicy veggie and tofu stew) and the Commissary Carrots (no cotija) are also standout vegan options.
