Summer is all about fresh fruit, fun in the sun, and from Kristina Carrillo-Bucaram’s cookbook, The Fully Raw Diet, proves it.
What you need:
2 to 3 cups coconut water
1/2 pineapple (about 12 ounces), leaves and rind removed, cored and cut in chunks
2 to 3 blood oranges, peeled, seeded, and cut in chunks
2 cups fresh strawberries, with stems
What you do:
1. Chill all ingredients. In a blender, place ingredients and blend until smooth, starting on the lowest speed and gradually working up to the highest. Blend until the mixture is smooth and the sound of the blender is high pitched and steady.
2. Drink immediately, or refrigerate for up to 4 hours in a tightly closed container. Shake before serving.
