What you need:
4 peaches, halved and stones removed
1 tablespoon raw sugar
1 cup vegan whipped cream
2 teaspoons sugar
1 teaspoon vanilla extract
1 tablespoon spiced rum
What you do:
- Prepare a smoker for a 15-minute smoke (140–165 degrees). Over peach halves, sprinkle raw sugar evenly. Smoke peaches, cut side down, for 30 minutes.
- To a medium bowl, add vegan whipped cream and fold in sugar, vanilla, and rum.
- Serve warm peaches with a dollop of spiced rum whipped cream.
