Vegan and Gluten-Free Chocolate Churro Waffles With Strawberry Sauce

These dessert-style cinnamon sugar and dark chocolate-drizzled waffles are absolute plant-based brunch perfection.

A syrupy-sweet homemade strawberry syrup is icing on the cake of these decadent, gluten-free breakfast or dessert waffles from food blogger Chef Bai. The oat and almond-flour batter makes these waffles beautifully crispy and golden with an extra touch of protein and fiber. 

What you need:

For the waffles:
3 tablespoons chia seed powder 
½ cup water
1 ripe banana, peeled
½ cup coconut sugar
1 teaspoon vanilla extract
1¼ cups oat milk
1 teaspoon baking soda
½ teaspoon salt
¼ cup cacao powder
2 cups blanched almond flour
1½ cups oat flour
¼ cup coconut oil, for greasing

For the strawberry sauce:
2 cups strawberries, tops removed and chopped
1 cup water
2 tablespoons coconut sugar
1 teaspoon vanilla extract
1 lemon, juiced and zested

For the coating:
1 cup coconut sugar
1 tablespoon cinnamon  
½ cup melted vegan dark chocolate 
¼ cup strawberries, for garnish

What you do:

  1. For the waffles, into a large mixing bowl, add chia powder and water, stir and set aside to thicken. Add banana and mash with a fork. Stir in coconut sugar, vanilla, and oat milk until smooth.
  2. In a different bowl, add baking soda, salt, cacao powder, almond flour, oat flour, and stir until well mixed. Add to wet mixture and mix well.
  3. Grease a waffle maker and warm until heated through. With a measuring cup, spread ¾ cup of batter into center of waffle maker. Cook for 6 to 9 minutes, depending on your waffle maker. Set aside on a cooling rack.
  4. Lightly spray waffle maker with oil in between each waffle to prevent sticking. Repeat with remaining batter until all waffles are cooked. 
  5. For the strawberry sauce, into a blender, add all ingredients and blend on high until smooth. Set aside. 
  6. For the coating, onto a large rimmed plate, add coconut sugar and cinnamon and stir. Set aside. 
  7. Into a double boiler on the stove, add chocolate and warm until melted, then let water simmer to keep melted, being careful not to burn. 
  8. In a large cast-iron skillet over medium high, spray with coconut oil. Cut waffles into quarters and lightly fry each side for about 1 to 2 minutes. Once each side of waffle is done, take tongs and place each quarter into cinnamon sugar coating, coating evenly. Place back on cooling rack and repeat until all waffles are coated. 
  9. Place waffles on a serving tray. Drizzle with warm melted chocolate. Garnish with strawberry slices and serve with strawberry sauce for dipping.
