What you need:

1 cup vegan yogurt
1 cup sliced ripe banana
1 cup oat flour
½ cup almond meal
1½ teaspoons baking powder
¼ teaspoon salt
2 teaspoons vanilla extract

What you do:

  1. Preheat waffle maker according to manufacturer’s instructions.
  2. Into a blender, add yogurt and banana and blend until smooth. In a mixing bowl, stir together oat flour, almond meal, baking powder, and salt. Add yogurt-banana mixture to dry ingredients along with vanilla. Mix to combine.
  3. When waffle maker is ready, ladle ½ cup batter into each waffle mold. Close lid and let cook for about 5 minutes (time will vary depending on waffle maker). Check waffles, and if more browning, allow to cook another minute. When ready, remove and transfer to a cooling rack. Repeat with remaining batter.
