- Preheat waffle maker according to manufacturer’s instructions.
- Into a blender, add yogurt and banana and blend until smooth. In a mixing bowl, stir together oat flour, almond meal, baking powder, and salt. Add yogurt-banana mixture to dry ingredients along with vanilla. Mix to combine.
- When waffle maker is ready, ladle ½ cup batter into each waffle mold. Close lid and let cook for about 5 minutes (time will vary depending on waffle maker). Check waffles, and if more browning, allow to cook another minute. When ready, remove and transfer to a cooling rack. Repeat with remaining batter.
