Vegan Coconut Creamed Corn

The creamiest, most decadent side just got veganized—and it’s simpler than ever. Hollan Hawaii shares this super-simple recipe to ensure that no plate goes without this holiday season.

What you need:

2 (16-ounce) bags frozen organic corn
1 quart coconut creamer
3 tablespoons sugar
¾ teaspoon salt
½ teaspoon pepper
2 tablespoons organic cornstarch
⅓ cup water

What you do:

1. In a pot over medium heat, add corn, creamer, sugar, salt, and pepper. Bring to a boil and stir continuously.
2. In a small bowl, whisk cornstarch and water. Stir slurry into corn mixture until creamed corn thickens, and remove from heat. If a thicker consistency is desired, add more cornstarch slurry 1 tablespoon at a time. Serve immediately.
