Vegan Devonshire Cream
Devonshire or clotted cream, made by scalding unpasteurized milk and separating out the clotted cream solids, is the traditional English accompaniment to scones.

Makes 1-1/2 cups
What you need:
- 1 12.3-ounce package Mori-Nu silken tofu, extra firm
- 1/4 cup raw cashews
- 1/4 cup raw pine nuts
- 2 tablespoons brown rice syrup
- 2 tablespoons lemon juice
What you do:
- In a food processor or blender, combine all ingredients and process for several minutes or until smooth.
- Transfer the mixture to a container, cover, and chill for an hour or more to thicken.
- Use as a topping for scones, fruit, pie, or cake.
