New vegan restaurant Amber’s Smoked Vegan will open in Las Vegas in May. Local chef Robert Ferrera partnered with North Carolina native Amber Dunn to create the southern-inspired soul-food menu which will feature vegan barbecue ribs, fried “chik’n” served with sweet potatoes and greens, “fish” and chips, po’ boys, and burgers made with Beyond Meat’s Beyond Burger patties. “After studying vegan cuisine and launching a vegan menu at Off The Hook, it inspired me to partner with Amber and open a fully vegan restaurant,” Ferrara told local media outlet Vegans, Baby. “We took input from the Las Vegas Vegans [a Facebook group], and they wanted southern-style soul food, so here we are.” Amber’s Smoked Vegan will join a number of vegan restaurants in Sin City that plan to open in coming months, including burger bar Blinders Burgers & Brunch and Asian-fusion eatery Chef Kenny’s Vegan Asian Restaurant.
