Vegan Sushi to Expand Across NYC
Beyond Sushi will open six additional Manhattan locations by 2018.

New York City-based vegan restaurant Beyond Sushi recently announced plans to expand to six more locations across Manhattan by 2018. The restaurant—founded by Guy Vaknin, a former contestant on Gordon Ramsay’s reality show Hell’s Kitchen—established its flagship location in the Union Square neighborhood in 2012 and has since expanded to two more locations, inside of Chelsea Market and an outpost in Midtown West. The first new location will open in the FiDi neighborhood in April and will serve inventive rolls drawn from its current menu such as black rice and mango roll Spicy Mang, asparagus topped Green Machine, and enoki mushroom-loaded Mighty Mushroom. The second new location will follow shortly thereafter in May near Herald Square and will have a full liquor license. “It will be about seven times the size of our Union Square location,” Guy’s wife and co-owner Tali Vaknin said, “and we will have phenomenal drinks, including a really cool muddled sake menu.” The Vaknins will open another Midtown East location by the end of the year with three more restaurants in the works for 2018. Fellow NYC vegan fast-casual restaurant by CHLOE is also expanding rapidly to locations across Manhattan, in addition to several outposts planned for Boston and Providence, RI.
