Vegan shop Pancho’s Vegan Tacos plans to open a new location, complete with a drive-thru, in Las Vegas. The shop revealed the news with a video update showcasing the finishing touches on the new location on Fort Apache Road, located 18 miles from its flagship location near the Las Vegas strip. Pancho’s, which operates under the motto “vegan food made for all,” first opened two years ago with a menu of Mexican dishes, including tacos that can be customized with vegan meats such as asada, al pastor, and chorizo; classic and wet burritos; sopes inspired by Southern and Northern regions of Mexico; and desserts such as arroz con leche (rice pudding), chocolate cake, and ice cream. In addition to announcing plans for its drive-thru location, the popular vegan eatery recently expanded to Henderson, NV (“Pancho’s on Anthem”) and plans to open a location in nearby Summerlin, NV in the coming months.
