Pineapple Lime Ice
This refreshing dessert is part of a Zen approach to eating.

Serves 4
What you need:
- 2 cups fresh pineapple, chopped
- 6 tablespoons lime juice
- 2 tablespoons maple syrup
- 2 tablespoons lime zest, grated
- 1/2 cup water
- Fresh mint or lime slices
What you do:
- Blend together all ingredients in a food processor. Strain blended liquid, discarding any pulp, and pour the thick juice into a bowl.
- Place in freezer. After 2 or 3 hours, remove from freezer and break ice into large chunks. Blend again in food processor until smooth and creamy. Return to freezer for at least 30 more minutes.
- To serve, scoop ice onto serving plates or into sherbet glasses. Garnish with sprigs of mint or slices of lime.
