In a recent article in The Guardian, writer Madeleine Somerville suggests that the best New Year’s resolution is a vegetarian one. “Consider avoiding resolutions you won’t keep (are you really going to the gym five times a week?) and try a meatless (or even meat-reduced) diet instead,” Somerville wrote. “You may find that the benefits work for you, just like they work for millions of others around the globe.” Raising cows for beef requires 160 times more land and produces 11 times more greenhouse gas emissions than growing vegetables or grains. The health, environment, and financial benefits of a vegetarian diet are central to Somerville’s argument, though she also discusses how her move to a veg lifestyle was originally based on ethics. She also recommends a transition to a plant-based lifestyle for those who are hesitant to take the leap all at once. Just one less burger a week can result in the same environmental impact as taking your car off the road for 320 miles.
