Vegan Butcher Shop Hosts Croissant Pop-Up

Herbivorous Butcher will be serving a perfected vegan version of the classic French pastry, courtesy of local baker Colin Anderson.

On Friday, Minneapolis-based vegan shop Herbivorous Butcher will host the Rise Above! pop-up featuring croissants by Colin Anderson of local start-up Eureka Compass Vegan Food. Anderson perfected his flakey croissants using vegan replacements for the traditionally butter-loaded pastry. The pop-up will take place during lunch, and offerings from the Herbivorous Butcher—including its homemade vegan cheese slices and plant-based deli meats—will be on-hand to complement the croissants (at the price of $3.50 each, or $10 for three). Herbivorous Butcher was founded in 2015 by brother and sister team Aubry and Kale Walch and has since received international media attention for its innovative plant-based offerings, including an appearance on Food Network show Diners, Drive-Ins, and Dives.
