Middle Eastern travel company Emirates Airlines served more than 20,000 vegan meals during the month of January. On-board vegan meals included Mushroom Ravioli; Vegetable Tagine served with couscous; and a Sweet Potato, Lentil, and Spinach Ragout served with steamed brown rice. Dessert options included Key Lime Parfait with date and citrus compote; Moist Chocolate Cake, and Chia Seed Pudding. Vegan options are the third most requested meal in economy class and requests for vegan meals across all classes increased by 40 percent in January. To better cater to its customers’ requests, Emirates introduced vegan cheese in April and has since served 18,000 kilograms (39,683 pounds) of the nut-based cheese to passengers. The airline currently rotates 170 plant-based recipes in its culinary arsenal, and serves 110 million meals annually to 55 million guests that travel to and from 140 cities worldwide.
