Vegan Red Velvet Beet Shake

If you’re looking to shake things up this Valentine’s Day, look no further than Ashley Melillo’s dreamy Red Velvet Beet Shake. The one-step, six-ingredient recipe from Melillo’s cookbook, Blissful Basil, touts health-promoting properties without sacrificing indulgent flavors and convenience, making it an excellent dessert-for-breakfast option. We suggest you add two straws to this single serving shake, but it tastes so good, you might not want to share.
Makes 1 shake
What you need:
½ cup chilled coconut cream
½ to 1 cup ice
¼ cup fresh beet juice
4 Medjool dates, pitted
2 tablespoons raw cacao powder or ¼ cup cocoa powder
1 teaspoon vanilla extract
What you do:
Into a high-speed blender, add all ingredients and blend until creamy.
