Vegan fast-casual restaurant chain By Chloe will more than triple the number of locations it operates in the United States and abroad to capitalize on the growing interest in vegan food. By Chloe CEO Patrik Hellstrand said the chain is “ready to take it to the next level” by expanding from 13 to more than 50 locations by 2023, and licensing locations in Canada, the United Kingdom, and the Middle East. “You will see us more in the West Coast, East Coast, and maybe in some other parts of the country,” Hellstrand told media outlet Cheddar. “And we also took on some capital last year that helps us grow on the people side as well.” In April 2018, the chain raised $31 million in venture capital and initially planned to expand to 20 additional US-based locations along with outlets across Europe and the Middle East but has now bolstered its ambitions since Hellstrand joined the company in late 2018. The chain, which was founded in New York City in 2015, has not been without controversy since it cut ties with By Chloe co-founder Chloe Coscarelli, who continues to fight former partner ESquared Hospitality as the group expands the brand bearing her name.
