Swap in different flavors of salsas or pasta sauces to turn this savory oatmeal from the No Meat Athlete Cookbook into a whole new dish.
What you need:
1 cup rolled oats
1 carrot, peeled and shredded
1½ cups water
1 cup stemmed and chopped kale
¼ cup salsa
2 tablespoons nutritional yeast
¼ teaspoon salt
¼ teaspoon black pepper
½ avocado, chopped
2 tablespoons roasted pumpkin seeds
¼ teaspoon smoked paprika
¼ teaspoon crushed red pepper
What you do:
- In a small saucepan over medium heat, add oats, carrot, and water. Heat until simmering, then cook, stirring often, until oats are tender, about 5 minutes. Stir in kale, salsa, nutritional yeast, salt, and pepper and cook for 1 more minute. Remove from heat.
- Pour into a serving bowl and top with avocado and pumpkin seeds. Sprinkle with smoked paprika and crushed red pepper and serve.
