Cheesy Vegan Oatmeal Bowl With Kale and Pumpkin Seeds
So long, sweet oatmeal! We’re obsessing over this savory breakfast remix featuring salsa, kale, roasted pumpkin seeds, and cheesy nutritional yeast.

Swap in different flavors of salsas or pasta sauces to turn this savory oatmeal from the No Meat Athlete Cookbook into a whole new dish.
What you need:
1 cup rolled oats
1 carrot, peeled and shredded
1½ cups water
1 cup stemmed and chopped kale
¼ cup salsa
2 tablespoons nutritional yeast
¼ teaspoon salt
¼ teaspoon black pepper
½ avocado, chopped
2 tablespoons roasted pumpkin seeds
¼ teaspoon smoked paprika
¼ teaspoon crushed red pepper
What you do:
- In a small saucepan over medium heat, add oats, carrot, and water. Heat until simmering, then cook, stirring often, until oats are tender, about 5 minutes. Stir in kale, salsa, nutritional yeast, salt, and pepper and cook for 1 more minute. Remove from heat.
- Pour into a serving bowl and top with avocado and pumpkin seeds. Sprinkle with smoked paprika and crushed red pepper and serve.
