New Vegan Bistro in NYC to Serve Plant-Based Steak and Seafood

Willow—a new restaurant from the chef behind Beyond Sushi—will offer vegan comfort food such as Scallop Cacio e Pepe, cheeseburger sliders, cauliflower wings, taquitos, and calamari.

On January 15, new vegan bistro Willow will open in the Chelsea district of New York City. The new concept was created by Guy and Tali Vaknin, the couple behind the city’s vegan sushi chain Beyond Sushi. Guy Vaknin has taken what he’s learned over the last decade as a chef and restaurant owner to create Willow’s menu, which specializes in vegan versions of classic American comfort food for lunch and dinner. The menu will feature dishes such as Porcini Chick’n Marsala, steak frites, Scallop Cacio e Pepe, cheeseburger sliders, cauliflower wings, taquitos, and calamari, along with a variety of sandwiches such as a Tuna Melt and Cherrywood Smoked Pastrami, salads, soups, fresh juices, and desserts.

“It’s been a tough year for New York, and restaurants have taken a big hit. We’re looking into the future, and we’re committed to our vision of sharing plant-based food with our community,” Guy Vaknin said. “We’re excited to explore new flavors and offer something special and creative. I saw a real need for vegan comfort food, especially amid the ongoing pandemic, and I wanted to bring my take on that to NYC.”

Willow will offer takeout and delivery through Postmates, Uber Eats, GrubHub/Seamless, Doordash, and directly from the restaurant. This Spring, the 2,200-square-foot restaurant plans to offer outdoor dining and indoor dining when restrictions are lifted. To celebrate the opening, Willow will offer a complimentary dessert to anyone who places an order of $25 or more through the restaurant’s website on opening day.
