On National Cookie Day (Tuesday) animal-rights organization Compassion Over Killing (COK) launched a petition urging Starbucks to develop new vegan cookie options. The petition—backed up by vegan journalist Jane Velez-Mitchell—has since garnered more than 31,000 signatures. While Starbucks added a vegan Macadamia Oat Cookie to its menu in April, the company plans to phase out the vegan cookie due to slow sales, according to COK. The petition urges Starbucks to explore other plant-based cookie flavors—such as chocolate chip, peanut butter swirl, and mocha—to diversify its offerings in the midst of the plant-based boom.  “Consumers want animal-free options,” the petition states. “And by offering a more buzzworthy cookie flavor, Starbucks can serve this huge market.” During a shareholder meeting in March, Starbucks Chief Operating Officer Rosalind Brewer revealed plans to debut more plant-based foods to its United States locations—a promise COK urges the company to keep as it continues to add vegan food options to locations in Europe. When it comes to beverages, Starbucks has recently added several items, including this year’s holiday Juniper Latte.
