J-Mobile, a new food truck venture by vegan restaurant J. Selby’s, will begin servicing the St. Paul and East Metro neighborhoods of the Twin Cities by the end of the month. In 2017, Matt Clayton opened J. Selby’s in St. Paul to overwhelming demand for its plant-based dishes, which caused the eatery to shutter for two weeks while it scaled-up staff and production capacity. Diane Satriano, a team member at the brick-and-mortar restaurant, will operate the truck. The truck will serve a variety of dishes including Gyros with Green Goodness Dressing, Kahlua Jackfruit with Spicy Slaw, and a selection of classic burgers and hot dogs (featuring Beyond Meat’s Beyond Sausage). “I’m thrilled at how the truck has turned out,” Clayton said. “It’s a big step in bringing plant-based foods to people who might not want to travel into St. Paul.” The truck—the third vegan mobile operation to launch this summer (alongside The Herbivorous Butcher Food Truck and Reverie Mobile Kitchen)—is scheduled to appear on September 16 at the Twin Cities VegFest on Harriet Island.
