Scottish pub Rutherfords Micropub recently launched a vegan lunch menu, despite not having a kitchen on the premises. The all-day menu features items that are room temperature or cold—rather than hot dishes—that can be enjoyed alongside its selection of craft whiskies and beer, including a vegan sharing platter or solo platter featuring walnut and mushroom pâté with oatcakes, sun-dried tomatoes, Nocellara olives, vegan cheese with caramelized onions, and falafel. The pub also offers similar animal-based dishes but owners Simon and Debbie Rutherford decided to offer a vegan option after noticing a shift in customer’s food requests. “We have noticed a real shift in people’s food requests, and one of our bar hosts is vegan, so we had a great taste-tester in her,” Debbie Rutherford told media outlet Border Telegraph. “People love to come and sample our very unusual drinks, and now they can enjoy the food they love at any time of the day. It was a challenge as we have no kitchen, but we’re pretty inventive, and determined.” Earlier this year, the Rutherfords created Vegan Haggis Gin, a full-strength spirit that is a vegan take on the traditional Scottish dish.
