Food-service giant Bon Appétit Management Company revealed that it is actively looking to increase plant-based protein alternatives at its 650 locations nationwide–which includes university campuses and corporate offices such as Google, eBay and the Getty Center. In a report card and road map for the future published on Business Wire, the company explained its progress on previous commitments to eliminate foie gras, gestation crates, and antibiotics from its supply chain, and provided insight into its future goals of expanding meatless options. Additionally, in order to hold chefs accountable for meeting Bon Appétit’s standards, the company will be using a tracking system to ascertain ounces-of-meat-per-guest consumption, percentages of vegetarian and vegan options available per individual location, and food waste. The company recently partnered with Hampton Creek to sell their Just Cookies, and uses their Just Mayo across all locations. Josh Balk, Hampton Creek co-founder and senior director of food policy for The Humane Society of the United States, said, “Whether it’s sourcing from more humane suppliers, endorsing legislation tackling animal cruelty, or offering more plant-based meals, [Bon Appétit] sets a very high bar for social responsibility.”
