The owners of a Vancouver-based fried chicken restaurant Juke Fried Chicken recently closed its sister location, Little Juke, to focus on a new concept: all-vegan eatery Beetbox in the city’s west end. At newly opened Beetbox, Justin Tisdall and Bryan Satterford offer plant-based chicken in the form of vegan chicken sandwiches, made with breaded and fried seitan and served with miso aioli, shaved cabbage, and spicy pickled cucumber on a toasted bun, along with vegan cheeseburgers, and chorizo-verde sandwiches. The 22-seat, counter-service eatery also offers chili cheese fries with meat-free chili, queso, and cashew sour cream, tempura onion rings served with chipotle aioli, and crispy fried Brussels sprouts with pumpkin-seed dukkah. Salad offerings include the Baby Gem (avocado dressing, oven-dried tomatoes, and white beans); roasted Kabocha squash salad (endive, arugula, fennel, red onion, and red wine vinaigrette); and beet and apple (candied pecans, maple dressing, dill, and horseradish). Beetbox will also offer local craft beer, wine, handcrafted cocktails, mocktails, kombucha, and milkshakes made with cashew and oat milk. “We worked hard to create a menu that was accessible to everyone, ethical and most importantly, delicious,” Satterford said. “As an omnivore chef, I was able to approach it from a different angle and design a menu of meat alternatives that has the feel, texture, and taste of the real thing.”
