On October 19, Las Vegas-based vegan butcher NoButcher will open its first brick-and-mortar location. The new shop will feature a large deli case to showcase the company’s vegan meat products, a dine-in area with communal seating, and a drive-thru for customers who are short on time. Its menu will feature sandwiches such as the signature Pulled NoPork featuring wheat-based pulled pork with barbeque sauce and maple-mustard coleslaw stuffed into a ciabatta roll, the Aloha NoRib with teriyaki and pineapple, and the Mediterranean grilled vegetable sandwich topped with vegan feta. NoButcher deli meats such as NoTurkey, NoPepperoni, and NoBacon, and sides such as potato salad, lentil salad, and spring salad will also be available for purchase from the deli case. “We had started serving NoButcher products at vegan festivals and received such positive feedback and encouragement we thought we should try to find a permanent place,” NoButcher co-owner Joe Vadala told VegNews. “There are some truly great vegan restaurants and some amazing chefs in Las Vegas, but there wasn’t anything like what we envisioned—a cool place for people to come, hangout, and interact while enjoying a great plant-based sandwich. Additionally, we wanted to provide a location where people could shop for unique, locally made, delicious, to-go plant-based delicatessen foods.” As demand for its products grows, NoButcher hopes to eventually expand to additional locations in the Las Vegas Valley and potentially other cities. “Our goal has always been to provide high-quality plant-based products to as many people as possible,” Vadala said. “We love the fact we have the opportunity to serve not only the vegan community, but everyone who enjoys delicious food, cares about animals, and is interested in sustaining our planet.”
