Are vegetarian hospital meals the wave of the future?

The UK’s National Health Service, the country’s publicly funded health-care system, is in hot water. The organization’s carbon footprint comes to a whopping 3 percent of the nation’s total, with meat served at its network of hospitals one of the primary culprits. In an effort to step up its game, NHS is pledging to whittle that figure down 80 percent by 2050. While there are no promises to go completely veg as of yet, they are determined to omit meat from the majority of its menus, and focus instead on fresh fruit, vegetables, and grains. Taking its cue from this groundbreaking gesture, PETA is urging Massachusetts General Hospital to join the meat-free movement as well.
