Minneapolis Eatery Aims to Break Five-Year Curse with Vegan Food

New restaurant Piggy Bank bets on the appeal of plant-based food—including Impossible Burgers topped with vegan meats and cheeses from The Herbivorous Butcher—to keep it in business longer than its predecessors.

New eatery Piggy Bank—the newest venture from restaurant group Kaskaid Hospitality—will host its grand opening on December 22 in Minneapolis, MN. The restaurant is the newest occupant in a space that has seen five different businesses shutter in the previous five years. Piggy Bank plans to differentiate its business—in hopes of achieving long-term success—by offering an extensive vegan menu that features meats and cheeses sourced from local vegan shop The Herbivorous Butcher, alongside burgers made with the popular plant-based Impossible Burger. “More often than not, restaurants are extremely siloed in what they offer,” Kaskaid CEO Kam Talebi said. “We wanted to create a place where there was something for everyone.” Earlier this month, Kaskaid’s restaurant chain CRAVE debuted a 30-item vegan and vegetarian menu—which also features a variety of products by The Herbivorous Butcher—across its locations in Minnesota.
