New Vegan Food “Tank” Hits the Streets in Utah

Utah’s new organic food truck will be serving vegan reuben wraps, soups, and locally brewed kombucha.

Brightly colored vegan truck Food Tank hit the streets of Moab, UT last month. Owner Elizabeth Jimenez has worked in the restaurant industry for 13 years and says she’s proud to finally serve food she can stand behind. “I genuinely love serving food, but I have a hard time serving food I don’t believe in,” Jimenez told local news outlet Moab Sun News. “Finally, I get to serve food I’m excited to provide.” The truck’s menu is still in development, but customers can expect several signature items including soups made with local produce, and the Truben—a wrap filled with marinated tempeh, sauerkraut, red cabbage, and vegan cheese. “We use our days off to go get fresh produce and put time and energy into preparing it to provide beautiful healthy food for our community,” Jimenez said. Across the state in Salt Lake City, government officials recently approved the expansion of plant-based milk company WhiteWave’s facilities—a move that is expected to boost the state economy by $5 million and create 100 high-paying jobs.
